Flavoured Olive Oil

Take a fresh bottle of olive oil and add
  • about 8 cloves of garlic (halved)
  • 1-3 chilli pods depending on size and heat

if you like

  • a teaspoon of coriander seeds
  • a teaspoon of pepper seeds
  • and whatever else spices you might fancy

After 2 weeks the oil tastes nice and flavoured. It may develop a bit of gas what is not a problem. Although it is not good for frying anymore as it gathers water as well. Just use it as a flavouring towards the end.

The longer you have it the more you might need to be careful to dose it.

I use a dispenser for shots. Less dangerous for overdosing and keeps the bits away from the dressing.
