Sometimes they are very hard, then I pop them into the microwave for a minute or so, or I carve a long slit and then use the spoon to lift them out. If they are however really perfectly ripe a spoon is fine. The skin should look fresh and shiney with no green, then they are at their best. We have pumpkins instead.<br />In one of Jamie Oliver's first books, there's a recipe in which slices of butternut squash sprinkled with olive oil, chilly flakes, crushed coriander seeds and maybe rosemary and garlic are roasted in the oven.
